&lt;span style="color: #999999; font-family: Verdana, sans-serif;"&gt;Mezclamos todo muy bien y cuando el arroz este listo lo escurrimos bien con la ayuda de un colador y lo volcamos en el bol junto con los demás ingredientes.&lt;/span&gt;&lt;br /&gt;

&lt;span style="color: #999999; font-family: Verdana, sans-serif;"&gt;Introducimos el bol en la nevera hasta el momento de servirla.&lt;/span&gt;&lt;br /&gt;

- Quitar la cabeza y la raspa a los boquerones, &amp;nbsp;limpiar el interior de los salmonetes y los calamares, y&amp;nbsp;quitar las cabezas de las gambas &amp;nbsp;y&amp;nbsp;pelarlas&amp;nbsp;abriendo el caparazón desde las patas.&lt;br /&gt;
&lt;br /&gt;
- Después, lavar todo&amp;nbsp;el pescados y secarlo.&lt;br /&gt;
&lt;br /&gt;
- Sazonarlos y rebozarlos en la harina, sacudiéndolos a continuación para que se desprenda la harina sobrante.&lt;br /&gt;
&lt;br /&gt;
- Freírlos en abundante aceite muy caliente. Si el aceite es limpio nos quedará la fritura más buena. &lt;br /&gt;

- En un plato poner papel absorbente y poner el pescado encima para que vaya soltando el aceite. Se echa aceite en la sartén, y se echan las habichuelas, cebolla, pimientos, tomate, ajos, una cucharadita de pimentón y se marea un poco en la sartén.&lt;br /&gt;
&lt;br /&gt;
Se echa agua hasta que cubra toda la verdura, y se deja que hierva un buen rato, hasta que veamos que la verdura esta tierna, se saca y la echamos en la baridora y se bate hasta que quede echa una crema. &lt;br /&gt;
&lt;br /&gt;
Toda la verdura que hemos batido la echamos a la olla junto con las patatas cortadas a trozos, los chorizos, Sal y especias amarilas, y dejamos que cueza hasta que las patatas esten tiernas. &lt;br /&gt;
&lt;br /&gt;

&lt;/div&gt;&lt;div style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;"&gt;En una sartén ponemos el aceite a calentar y cuando esté caliente echamos las patatas, la cebolla y un poco de sal. &lt;/div&gt;&lt;div style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;"&gt;Cuando las patatas estén doraditas las sacamos y las escurrimos (yo uso un escurridor), el aceite restante de la sartén lo quitamos. &lt;/div&gt;&lt;div style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;"&gt;Batimos los huevos con un chorrito de leche (para que quede mas esponjosa), y cuando están batidos los huevos los mezclamos con las patatas y la cebolla. &lt;/div&gt;&lt;div style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;"&gt;Toda esa mezcla la echamos en la misma sartén que hemos usado para freir las patatas con unas gotitas de aceite, y dejamos que cuaje, cuando veamos que ya está cuajada, le daremos la vuelta con un plato plano (que le vanga bien a la sartén), hay que tener mucho cuidado al darle la vuelta que puede terminar la tortilla en el suelo. &lt;/div&gt;&lt;div style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;"&gt;&lt;br /&gt;

Ponga en el vaso los huevos duros y troceelos 2 segundos, velocidad 4. Retire del vaso y reserve&lt;br /&gt;
&lt;br /&gt;
A continuación, ponga el jamón en el vaso y dé 4 ó 5 golpes de turbo. Compruebe el tamaño y, si lo desea más picado, déle 3&amp;nbsp;ó 4 golpes más. El tiempo dependerá de la dureza del jamón. Retire del vaso y reserve. &lt;br /&gt;
&lt;br /&gt;
Sin lavar el vaso, ponga los dientes de ajo, los tomates y la sal, y programe 30 segundos, velocidad 5. Añada el pan y el vinagre y triture 30 segundos, velocidad 5 y 2 minutos velocidad 10. El tiempo dependerá de la calidad de los tomates. Programe velocidad&amp;nbsp; 5 y vierta poco a poco el aceite sobre la tapa sin quitar el cubilete, hasta que termine de incorporarlo.&lt;br /&gt;
&lt;br /&gt;
Por último, vierta el salmorejo en una fuente e introdúzcala en el frigorifico, hasta el momento de servir. Unos minutos antes, adorne la superficie con el jamón serrano y los huevos picados. Sírvalo muy frio.&lt;br /&gt;

Una buena alternativa al gazpacho andaluz&lt;br /&gt;

Se pone&amp;nbsp;pan del dia anterior&amp;nbsp;en remojo, una vez este bien empapado se exprime con la mano para extraerle el agua. &lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
Se coloca el pan en una batidora junto al resto de ingredientes, excepto los huevos y el jamón&amp;nbsp;que reservaremos. &lt;br /&gt;
&lt;br /&gt;

2 vasos de agua&lt;br /&gt;
Tomillo o hierbas provenzales&lt;br /&gt;
Pimienta (en polvo o en grano)&lt;br /&gt;
Avecren&lt;br /&gt;
aceite &lt;br /&gt;

En una bandeja de horno o fuente de cristal,&amp;nbsp; se unta en aceite y se espolvorea avecren, encima se pone el pollo (yo lo pongo en trozos según los comensales). &lt;br /&gt;
&lt;br /&gt;
&lt;div style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;"&gt;Se pica la cebolla en juliana y los ajos en laminas, y se pone todo en la bandeja junto al pollo con&amp;nbsp;un poco de avecren encima del pollo. &lt;/div&gt;&lt;div style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;"&gt;Acontinuación se echa un vaso de vino y 2 de agua, el zumo de los limones, las hiervas provenzales y la pimienta y un poquito de aceite por encima del pollo. &lt;/div&gt;&lt;div style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;"&gt;Se mete en el horno a 200º y de vez en cuando se da la vuelta para que se haga por los dos lados, si vemos que se&amp;nbsp;esta quedando un poco seco se le agrega un poco mas de agua. &lt;/div&gt;&lt;div style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;"&gt;&lt;br /&gt;

&lt;/div&gt;&lt;div style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;"&gt;Posteriormente se derrite en un cazo los 115 gr. de mantequilla y se junta con las migas de galletas, hasta que tengamos una masa homogenea.&lt;/div&gt;&lt;div style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;"&gt;&lt;br /&gt;
Yo personalmente le pongo un poco de leche para que no este tan aceitosa la pasta de galleta por la mantequilla&lt;/div&gt;&lt;div style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;"&gt;&lt;br /&gt;
Untamos el molde con mantequilla y extendemos la masa.&lt;/div&gt;&lt;div style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;"&gt;Ponemos la pasta-base de la galleta en el molde uniformemente.&lt;/div&gt;&lt;div style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;"&gt;Se pone a pre-calentar el horno a 200Cº (posición de calentar arriba y abajo).&lt;/div&gt;&lt;div style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;"&gt;En el vaso de la batidora, ponemos:&amp;nbsp; 3 huevos, queso Philadelphia y el azucar. Lo batimos todo y una vez batido, se agrega al molde en el que previamente habremos extendido la masa.&lt;/div&gt;&lt;div style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;"&gt;Una vez hayamos hecho esto, se mete en el horno durante aproximadamente 25 minutos, se va pinchando el centro de la tarta con un&amp;nbsp;palillo y cuando éste salga limpio, la tarta ya está lista para comer. &lt;/div&gt;&lt;div style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;"&gt;A mi me gusta dejarla un ratito en el horno, con éste apagado para que con el calor que le queda al horno, se termine de hacer.&lt;/div&gt;&lt;div style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;"&gt;Se saca del horno y se deja enfriar, cuando está fría se mete en la nevera durante 3 horas. En el momento que nos la vayamos a comer se añade una capa de mermelada, en función del gusto de cada uno se añade más o menos mermelada.&lt;/div&gt;&lt;div style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;"&gt;&lt;br /&gt;

&lt;/div&gt;&lt;div style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;"&gt;En una olla con agua&amp;nbsp;ponemos la merluza, &amp;nbsp;las gambas y un poco de sal y se deja de 5 a 10 minutos (según el grosor de la merluza y las gambas), se reserva y se&amp;nbsp;aparta un poco de caldo que luego utilizaremos para hacer la salsa.&lt;/div&gt;&lt;div style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;"&gt;Se lavan&amp;nbsp;las zanahoria y los puerros y se cortan en trozos pequeños, en una sarten&amp;nbsp;echamos mantequilla y aceite y&amp;nbsp;dejamos que se derrita, acontinuación echamos la verdura y la sal y se deja rehogar aproximadamente unos 15 minutos, añadimos agua de la coción del pescado y dejamos que cueza uno minutos, añadimos la nata y lo dejamos a fuego lento unos 5 minutos,&amp;nbsp;se&amp;nbsp;pasa todo al&amp;nbsp;vaso de la batidora y se bate. &lt;/div&gt;&lt;br /&gt;

En una sarten con aceite se echa el pollo bien en filetes o troceado (yo normalmente lo hago troceado) y se salpimenta, cuando este medio echo se reserva. &lt;br /&gt;

Acontinuación se frie la cebolla en el mismo aceite del pollo hasta que este doradita, le echamos el pollo, el bacón y se marea en la sarten, echamos la nata y añadimos sal, pimienta y nuez moscada, &amp;nbsp;lo dejamos hervir a fuego lento, pasados unos 5 ó 10 minutos apagamos el fuego y lo dejamos reposar. &lt;br /&gt;

&lt;span style="color: #999999;"&gt;Vierta los liquidos, en el vaso y programe 1 minuto, 37º, velocidad 4.&lt;br /&gt;
&lt;br /&gt;
Añada la levadura y mezcle 5 segundos, velocidad 4.&lt;br /&gt;
&lt;br /&gt;
A continuación incorpore la harina y la sal, programe 1 minuto, vaso cerrado, velocidad espiga.&lt;br /&gt;
&lt;br /&gt;
Retire la masa del vaso con las manos aceitadas y extiendala sobre una bandeja de horno o bien engrasada en aceito o sobre papel vegetal. Estirela con las manos hasta que quede muy fina. Ponga los ingredientes elegidos (salsa de tomate, mozarella, etc...) e introduzcala en el horno, bajando la temperatura a 225º.&lt;br /&gt;
&lt;br /&gt;
Hornee durante 20 minutos aproximadamente.&lt;br /&gt;
&lt;br /&gt;

1 litro de leche &lt;br /&gt;
3 cucharadas colmadas de leche en polvo &lt;br /&gt;
125ml de yogur natural &lt;br /&gt;
4 cucharadas de azúcar&lt;br /&gt;
Sirope de fresa &lt;br /&gt;
&lt;br /&gt;
&lt;strong&gt;&lt;span style="color: silver;"&gt;&lt;span style="font-family: trebuchet ms;"&gt;&lt;/span&gt;&lt;/span&gt;&lt;/strong&gt;&lt;strong&gt;&lt;span style="color: #eeeeee; font-family: trebuchet ms;"&gt;ELABORACIÓN:&lt;/span&gt;&lt;/strong&gt;&lt;br /&gt;
&lt;br /&gt;
&amp;nbsp;Mezclamos todos los ingredientes en un bol. &lt;br /&gt;
&lt;br /&gt;
Añadimos el sirope de fresa a nuestro gusto, hasta que tome un buen color rosado. &lt;br /&gt;
&lt;br /&gt;
Vertemos la mezcla en vasitos y metemos los vasitos a la yogurtera. &lt;br /&gt;
&lt;br /&gt;
Dejar fermentar en yogurtera entre 8 y 12 horas. A mayor horas de fermentación mayor será la acidez. &lt;br /&gt;
&lt;br /&gt;

Cascar los huevos en un bol y remover con el azucar con una varilla manual (si no se tienes pues con una cuchara de madera)&lt;br /&gt;

Añadir el yogur y el aceite y siguir removiendo&lt;br /&gt;
&lt;br /&gt;
Limpiar el limón y rallar un trozo de la cáscara por encima&lt;br /&gt;

Añadir la harina y la levadura y mezclar bien.&lt;br /&gt;
&lt;br /&gt;
Untar el molde con mantequilla, espolvoréarlo con harina y verter dentro la masa.&lt;br /&gt;
&lt;br /&gt;
Introducir el molde en el horno (previamente calentado) a 180º durante 30 minutos.&lt;br /&gt;
&lt;br /&gt;
Apagar el horno, pero no sacar el bizcocho ni abrir la puerta del horno.&lt;br /&gt;
&lt;br /&gt;
Dejar que se termine de hacer con el calor que queda en el horno después de apagarlo.&lt;br /&gt;
&lt;br /&gt;
Sacar el bizcocho, desmoldalo, esperar a que se enfrie del todo y échar un poquito de azucar glass por encima &lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;

200 grs. de carne picada ( cerdo, ternera, o cordero)&lt;br /&gt;
4 cucharadas de bechamel&lt;br /&gt;
queso rallado&lt;br /&gt;
orégano&lt;br /&gt;
salsa de tomate&lt;br /&gt;
sal&lt;br /&gt;

&lt;br /&gt;
&lt;/div&gt;Lavamos bien la berenjena por fuera y la cortamos a la mitad.&lt;br /&gt;
&lt;br /&gt;
retirando toda la pulpa y dejamos un borde de 1/2 cm. todo alrededor. Le ponemos un poco de sal para que suelte el líquido amargo y reservamos.&lt;br /&gt;
&lt;br /&gt;
En una sarten con unas 2 cucharadas de aceite, doramos la cebolla picada. Cuando esté bien pochada y sin que tome color, añadimos la carne picada. Yo he utilizado una mezcla de cerdo y ternera a partes iguales.Doramos durante unos minutos y añadimos la carne de la berenjena picada en trocitos pequeños.&lt;br /&gt;
&lt;br /&gt;
Dejamos que cueza unos 6 minutos y le agregamos la salsa de tomate, el orégano y la sal.&lt;br /&gt;
&lt;br /&gt;
Lavamos bien las cáscaras de las berenjenas para eliminar el exceso de sal y rellenamos con la mezcla.&lt;br /&gt;
&lt;br /&gt;
Cubrimos con un par de cucharadas de bechamel cada mitad. Sobre ella, ponemos el queso rallado a nuestro gusto.&lt;br /&gt;
&lt;br /&gt;
En una fuente resistente al horno, ponemos una base de salsa de tomate( si es casera, mucho mejor) y espolvoreamos con orégano. Sobre ésta salsa colocamos las berenjenas e introducimos a horno moderado unos 15 minutos.&lt;br /&gt;
&lt;br /&gt;

En un sartén aparte (yo lo hago en la misma), se echa aceite y se agrega el tomate y una cucharada&amp;nbsp;de pimentón, y se va mareando.&lt;br /&gt;
&lt;br /&gt;
Se hace un majao de ajos, perejil y pimienta (se echa sal al mortero, para que no salten los ajos) y se machaca todo. &lt;br /&gt;
&lt;br /&gt;

&lt;div&gt;&lt;/div&gt;Cubrir el fondo de un recipiente con el sazonador, poner encima el lomo del salmón (yo le espolvoreo eneldo por encima) limpio sin raspas&amp;nbsp;ni espinas.&lt;br /&gt;

Cubrir la parte superior con este producto (a mayor grosor de salmón, mayor grosor de producto). &lt;br /&gt;
&lt;br /&gt;
Cuando estan cubiertos por ambos lados el lomo del salmón, tapar el recipiente con papel de aluminio o film transparente, se le coloca peso uniforme encima.&lt;br /&gt;
&lt;br /&gt;
Introducirlo en el frigorifico durante 24h, si el lomo de salmón es muy grueso se deja 48h, trascurrido ese tiempo&amp;nbsp;sacarlo del frigorifico y&amp;nbsp;lavarlo con agua fría.&lt;br /&gt;
&lt;br /&gt;
Secarlo con papel de cocina y dejarlo reposar unos 5 minutos&lt;br /&gt;
&lt;br /&gt;

&lt;/div&gt;&lt;div&gt;Primero troceamos y salteamos el atún con sal y pimienta en una sartén con aceite caliente. &lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;Lo dejamos enfriar.&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;En una cazuela ponemos agua a hervir y cocemos las patatas con piel. &lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;Luego las sacamos, las pelamos y las cortamos en dados.&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;A continuación mezclamos el atún y las patatas y echamos la mayonesa en la cantidad que queramos. &lt;br /&gt;

1 kg de boquerones &lt;br /&gt;
3 dientes de ajo &lt;br /&gt;
Perejil &lt;br /&gt;
Vinagre &lt;br /&gt;
Aceite de oliva &lt;br /&gt;
Sal &lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
&lt;span style="font-family: trebuchet ms;"&gt;&lt;span style="color: silver;"&gt;&lt;strong&gt;ELABORACIÓN:&lt;/strong&gt; &lt;/span&gt;&lt;/span&gt;&lt;br /&gt;
&lt;br /&gt;
Limpiamos y lavamos los boquerones, que han de ser frescos y grandes. &lt;br /&gt;
&lt;br /&gt;
Los dejamos macerar con agua y vinagre durante tres horas aproximadamente en un recipiente hondo.&lt;br /&gt;
&lt;br /&gt;
Pasado el tiempo de maceración, los pasamos a una fuente escurridos y les echamos el perejil picado y el ajo laminado con un buen chorreón de aceite de oliva. &lt;br /&gt;
